1. SEA GRAPES / VEGAN CAVIAR (Caulerpa lentillifera). This is a native green Hawaiian seaweed (limu) that can be served raw, in salads, or as a substitute for caviar or tobiko. It has a tremendous ‘crunch and pop’ texture. It has all its cells joined together, which means that it loses its turgor (freshness) very quickly after it is picked, or if it is dehydrated. We sell our Caulerpa immersed in brine (high salt) seawater and/or still attached to the plastic mesh sheets, so that chefs or consumers can pick the strands immediately before serving.

2. OCEAN KALE (RED) (Halymenia hawaiiana) – or Limu lepe o Hina (Limu shawl of Hina). This is a native red Hawaiian seaweed that can be ideally served as a garnish, in salads or relishes, either fresh or dried, and can be salted for shelf-stability (and refreshed in salt water when ready to serve). It has a very crisp texture when fresh, and may be more readily served finely chopped.

3. ATLANTIC OGO (Agardhiella). This is a red seaweed that is native to the Atlantic and Caribbean, that we grow in land-based tanks at NELHA, in Kona. It can be served as a substitute for ogo, or as salads or relishes. It can be served fresh or dried, and can be salted for shelf-stability (and refreshed in salt water when ready to serve).

4. SEA LETTUCE (Ulva). This is a green native Hawaiian seaweed that is firm in texture, and may be best served when finely diced, or when toasted or dried, as a furikake.

5. NENUE (Kyphosus vaigiensis) – Chubs, or Rudderfish. This is a native Hawaiian herbivorous reef fish – it literally makes a living in the wild, eating seaweed! As an herbivorous fish, it thrives on a low-protein / low carbohydrate diet, which means it has a very low environmental footprint. It is highly esteemed in local cuisine, particularly as poke.

Ocean Era has developed hatchery and grow-out culture techniques, and is looking to scale production both here in Kona, and off Oahu. Ideal harvest size for Nenue is between 1 lb and 1½ lbs. The next batch of fish should be available in fall, 2023.
